We use authentic ingredients — wild botanicals, real fruits and vegetables, all carefully sourced.

Foraging

We forage to provide unique flavors that you might not have tried before. The ingredients we pick are typically not commercially available, such as Douglas fir, woodruff, or cherry blossom.

We forage the whole year round, though the period from May to September is our busiest. When we cannot get around to picking it ourselves we will employ the services of our friend Paulinna, a herbal expert and 'witch' (the good type), who brings us incredible plants to try out for R&D.

We only ferment real fruits, juices and botanicals. No concentrates, flavorings or preservatives.

Our orchard farmer: Møn økologisk

An hour's drive to the south of Copenhagen you will find the stunning island of Møn. It's here that our friend Eva has a little fruit orchard producing, amongst other things, sensational quince. Pest control is provided courtesy of her flock of chickens. We help at harvest time as she feeds us her homemade wine in return for a day's fruit picking.

Our berry farmer: Thy Økobær

We have been working with our friends at Thy Økobær since we started 5 years ago and they have become an essential part of our business. Niel's farm in the north of Jutland produces the most spectacular organic berries you can imagine. His family has been working the farm for over 5 generations.
