This is our collaboration with The Four Horsemen, the legendary Brooklyn restaurant co-owned by LCD Soundsystem’s James Murphy. A longtime supporter of MURI, the restaurant is known for its world-class wine list curated by the late Beverage Director, Justin Chearno.

We make a local Stevnsbær sour cherry wine, adding fermented ice-clarified tomato. We then blend lacto-fermented beetroot to deepen the savory complexity and a kefir infused with bay leaf and green peppercorn for herbal spice and structure.

We both wanted to create a bottle that was more 'wine-adjacent' than our typical blends as Justin wanted to match the excellent guest experience for those note drinking alcohol. The end result was balanced, complex, and deeply personal, made for pairing with the restaurant’s acclaimed food while offering non-drinkers the same sense of occasion.
