    Yamilé is named after our friend, Peruvian oenologist Yamilé Abad, who introduced us to carbonic maceration and helped inspire the approach behind the blend. Her influence can be found in its warm, expressive and slightly unconventional character.

    It is a sparkling rosé blend built around raspberries, gooseberry, smoked rhubarb and a pink peppercorn fermentation. Honey brings roundness, while goldenrod, angelica root and star anise add aromatic depth. The result combines bright fruit with smoke, spice and a subtle vinous funkiness.

    Yamilé is relaxed and approachable, but there is plenty to discover beneath the surface. It works particularly well at the dinner table, especially alongside aromatic dishes, smoked fish, grilled chicken, barbecue flavours or creamy sauces. It is equally suited to casual gatherings and more adventurous food pairings.

    It opens with soft red fruit and fresh raspberry, followed by creamy smoke and delicate spice. The palate is dry and refreshing, with fine bubbles, gentle acidity and a rounded texture. Pink peppercorn and aromatic botanicals create a complex, lingering finish.
