Where the Woodruff Grows
At Muri we are influenced by the rhythms of the landscape. We have long, dark winters in Copenhagen that sometimes seem like they will never end. So when spring arrives there is a fresh energy that takes over the city. It blossoms with a tapestry of colours and fresh aromas, and the forest begins to fill with wonderful botanicals.

One of our favorite spring botanicals is woodruff (galium odoratum): a delicate herb that we prize for its subtle, sweet aroma and grassy notes. Foraging woodruff at this time of year gives us a strong connection to the life of the forest, and so it was that last week we ventured north of Copenhagen to one of our trusted secret spots to pick our first batch of the season.

Woodruff is a key ingredient in our very first blend, Passing Clouds. It gives a subtle marzipan characteristic that provides a complex counterpoint to the floral highs of geranium and quince. It gently imbues the blend with hints of honey and almond that balance the slight acidity of the white currant wine, giving Passing Clouds its unique and memorable flavor.
Passing Clouds

Sparkling and refreshing with bright acidity and a heady nose of flowers, honey and ripe fruits. Passing Clouds is dry but with multiple dimensions of flavors and a vinous funkiness. Our original blend, named after a once-eponymous venue in London's East End, is ethereal, uplifting, and perfect for celebrations.
Ingredients
Fermented gooseberries, white currant wine, quince kefir, jasmine tea, geranium & woodruff kvass.
Paring Notes
Serve chilled in a champagne flute. Pair it with aromatic dishes, seafood and white rinded cheese. Once opened, keep refrigerated and consume within 2 days.
