Recipe for Sherbet Daydream alcohol-free sparkling rosé with handwritten text on a white background.

Sherbet Daydream is one of our most playful blends. Its name refers to the sharp, fizzy sherbet powder found in traditional British sweets and captures the drink’s bright, colourful and slightly nostalgic character.

It is a sparkling pink blend built around pickled rhubarb, redcurrant, juniper and Douglas fir. The rhubarb brings vivid acidity and juicy fruit, while the juniper and Douglas fir introduce a fresh, resinous quality. Together, they create a distinctive combination of Nordic ingredients, playful flavour and precise craft.

Sherbet Daydream is made for lively and social occasions. Its freshness makes it especially good as an aperitif, at summer gatherings or alongside oysters, ceviche, crudo and other raw or cured seafood. It is colourful, playful and immediately refreshing.

It opens with bright red fruit and fragrant notes of pine, followed by lively acidity from the pickled rhubarb. The palate is crisp, juicy and energetic, with a dry, aromatic finish that is lightly herbal and pleasantly tart.
