Six Years of Passing Clouds
Six years ago, Passing Clouds became our first ever blend.
Its story began at a launch party beside the water in Copenhagen. The day before, Murray had gone over the handlebars of his bike, leaving him with a broken elbow and a face full of gravel. At the party he found himself shucking oysters and pouring Passing Clouds with one arm.
Yet after six months of development, the main thing we remember is finally able to watch people taste the drink we had imagined for so long. It was the beginning of something new: an alcohol-free drink conceived not as an imitation or replacement, but as something with an identity of its own.
Passing Clouds has remained our bestseller ever since.
A name with a history
We named Passing Clouds after a wild former nightclub in London. Like the blend, it felt dreamy and ethereal—a world away from traditional ideas of abstinence.
Even its original round label, inspired by the shape of a yeast cell, reflected the spirit of experimentation behind the drink.
Building the blend
Passing Clouds begins with green gooseberries, which we ferment with wine yeast to create its bright, moreish acidity.
We add beautifully sweet-and-sour white currants from Thy Økobær farm in Jutland. Quince is picked at our friend Eva’s orchard on Møn, then ground down to make a water kefir prized for its elegance and aroma.
Finally, we infuse foraged woodruff and geranium into caramel-malt kvass, bringing notes of brioche, hay, and honey.
Together, these elements create something vinous, complex, and distinctly gastronomic—a drink shaped by the same attention to ingredients, fermentation, texture, and balance that might be expected from a kitchen.
Six years on
The world of non-alcoholic drinks has changed enormously since we first poured Passing Clouds in Copenhagen. We have changed, too, creating new blends and exploring ingredients and techniques that continue to broaden the possibilities of drinks without alcohol.
The idea at the heart of MURI, however, remains the same: to forge a new path and create original flavors that bring a genuine sense of discovery and occasion to the table.
Six years after its launch, Passing Clouds continues to embody that idea. It is where our story began—and (quietly) remains our favorite child.
