Sherbet Daydream: the happy result of a festive feeling

We released Sherbet Daydream exactly two years ago today! We had wanted to create a special blend for the holidays that tasted like a Christmas tree, and we spent a month or so racking our brains about how we could make the perfect alcohol free aperitif for the celebratory season.

Raiding the family tree for inspiration

Our minds drifted back a few years to a collaboration we made with the fabulous Restaurant Kadeau. They had asked us to create a blend using Nobilis pine cones that they foraged from the 'Paradisbakkerne' forest outside their place on the beautiful island of Bornholm. They pickled them to preserve them, and you could pretty much eat them straight from the jar and they would taste like aromatic crisp apples. We used them to infuse into the final blend and their scent and aroma was utterly heavenly.

The pickled Nobilis pine cones got us thinking. That variety of pine is quite hard to get for us urban Copenhageners, but we did have access to Douglas fir in the woods near Lyngby, and we found that by infusing its needles into a vinegar that we got an equally delicious pickle liquor.

This pickle liquor is the very essence of Sherbet Daydream, as we use it to macerate the fresh rhubarb that gives the drink its sharp, clean finish. We don't normally seek to create acetic acid, but in this blend it piques the acidity just enough to sharpen the senses. We even add a touch of the liquor along with the rhubarb to give it extra tang.

The perfect pair for parties

Someone once described Sherbet Daydream as being "a cross between a Christmas tree and the Barbie movie," and we think that's pretty accurate! It's bubbly, pink, fun and festive, and is a brilliant aperitif to give to arriving guests.

For food pairing ideas, we cured some salmon this year and Sherbet Daydream's acidity cut gorgeously through the fatty fish. It will also play nicely with smoked salmon, blinis and caviar, or oysters on your holiday table.

All in all, it's the perfect choice for a festive non-alcoholic drink!
