General

No. Our blends have acidity, complexity, and they pair with fine food. But the comparison with wine ends there. We intentionally blend each bottle to give you new flavor experiences. We have too much respect for wine to try to copy it.

We use our skills to expertly ferment ingredients without producing alcohol in the first place. There is no need for us to de-alcoholize anything - this would strip the drink of its flavor and relies on heavy industrial processes to remove alcohol.
We take another path: non-alcoholic by design, shaped through short fermentations with special yeasts, water kefir, kvass and koji, refined with gastronomic techniques and careful blending.

We’re a small team of 8 people in Copenhagen. Everything, from fermenting and smoking fruit, to bottling and shipping, happens under one roof in our blendery.Â

We recommend Fade to Black (black currants with chamomile + fig leaves), Passing Clouds (gooseberry, quince, woodruff), and Yamilé (carbonic-macerated raspberry, smoked rhubarb, goldenrod, and pink peppercorn).

Yes. If you find yourself in Copenhagen, we’d love to host you in our Blendery in Skudehavnen: Copenhagen’s last true fishing harbor. A visit gives you a chance to taste both current releases and works in progress and hear a little about how ingredients, time and technique come together in each bottle.

No. Kombucha is just one fermentation method. We layer multiple complex fermentations, creating refined and complex blends.

We use foraged botanicals, which we pick the whole year round, though the period from May to September is our busiest. When we can't get around to picking it ourselves we ask our friend Paulinna, a herbal expert and 'witch' (the good type!), who brings us bundles of delicious plants for our blends, particularly lots of the woodruff in Passing Clouds.Â
Other ingredients come from small scale farmers we trust, like our quince that we get an hour drive to the south of Copenhagen on the stunning island of Møn from our friend Eva. Or our berries, from our buddy Niels on his family farm in Jutland.ÂFind more about our ingredients on our Ingredients page.

Every one of our blends is small batch and everything is done under our roof. We keep our process close as this is how we honor the ingredients, the recipe, and you - the person we have made it for.

That depends on which bottle you are trying first:
- Fade to Black - kvass made with currants and pine.
- Four Horsemen - ice-clarified tomato and fermented beetroot.
- Yamilé - smoked rhubarb and carbonic maceration.
- Koji Rice Series 1Â - koji fermentation with rice and smoked lavender.

Our blends are best served chilled in a wine glass. We use real fruits so there may be some sediment which is perfectly safe. We recommend turning the bottle prior to serving to incorporate any sediment.

When we talk about MURI as clean label, that means no sulphites, preservatives, additives, or shortcuts. Just real, quality ingredients.

Check the back of your bottle for certainty. All bottles from Summer 2025 have a 3 year shelf life, if stored in a cool, dry place. Once opened, store in the fridge and consume within 3 days.

All our blends are under 0.5% ABV and considered non-alcoholic. Perfect for mindful drinking and elevated pairings. There is a trace element of alcohol which will be comparable to a ripe piece of fruit.
Dietary restrictions

Most of our drinks are suitable for vegans, apart from Uzume and Yamilé.

Passing Clouds is the only product to contain caffeine on account of the tea in the blend.

Yes, our bottles are pasteurized so they are safe for those who are pregnant.
