Introducing our new collaboration with the renowned Four Horsemen restaurant in Brooklyn, New York.

MURI x The Four Horsemen

Owned by James Murphy from the band LCD Soundsystem, the 1* restaurant has been a big supporter of Muri since we started. It's famous for having one of the best wine lists in America. With a drinks program driven by one of the industry legends - Beverage Director Justin Chearno - the restaurant won the James Beard award for Best Wine Program in 2022 and is a must-visit for any wine lover in NYC.

Murray vividly remembers the first tasting we did at the restaurant in 2022. "We had only just arrived in New York and I was frankly terrified. The reputation of the wine program there is incredible and we were so unsure of ourselves at that point that I had no idea what would happen. As it turned out, Justin was so warm and welcoming and immediately saw what we were trying to do. He instantly became a real champion of MURI and I remember calling the team straight after to tell them that we'd passed this massive credibility test."

In November 2023, Murray and Justin met at the restaurant to see if there was something cool that they could produce together. Guests at the restaurant are famously spoiled by the epic wine card but Justin wanted those not drinking to feel the same sense of occasion. It was, he said, important that the bottle was more 'wine-adjacent' than our typical blends as 4H was after all a wine bar, but also that the drink could serve as versatile pairing for the amazing dishes coming out of the kitchen.

We got to work and exchanged ideas by sending many trials across the Atlantic. It was a breezy and serene collaboration. Justin was onboard with almost everything, although we spent plenty of time toning down what he (quite rightly) suggested was a Danish predisposition to 'volatile acidity'.

The blend turned out better than all of us dreamed. Creating a still red without alcohol is incredibly hard, and we collectively managed to land upon something that was balanced, textured, complex and innovative.

In May 2023 Murray was at a wine festival outside Vienna, trialing the final version of the blend. Unexpectedly, Justin suddenly arrived and the two of them tasted it together. Justin was so proud about it he was calling people over to try it and we knew it was ready to release.

Tragically, Justin passed away suddenly in August, 2024, leaving all of the wine and hospitality community completely devastated. The final blend bottles were apparently delivered to the restaurant the day after he passed. How the folks at The Four Horsemen managed to deal with that, we can't imagine. We have wondered what to do since then, as without Justin's guidance and enthusiasm this project would never have started. Justin's friends have set up a Go Fund Me page to assist his family, so we have decided to donate all our US profits from the blend to this. You can also donate here.

We hope that the blend will contribute a small part to Justin's huge legacy. It's warm, it's innovative, and it's inclusive. We all love it, and we hope you will too.

The Blend. A silky still red made from Stevnsbær sour cherry wine, ice-clarified tomato water, lacto-fermented beetroot, bayleaf and green peppercorn water kefir.

The Taste. Ripe red fruit to the fore. With balanced acidity and a luxurious texture, the blend is given intricate savouriness from the salty beetroot and has a lightly spicy finish.

The Pairing. Pair with duck, root vegetables, or ideally the delicious homemade sausage with mashed potatoes and prunes that is on the menu at the Four Horsemen from time to time.
