Uzume is our fabulous new collaboration with legendary French chef Anne-Sophie Pic. Anne-Sophie is the world’s most decorated female chef, holding 12 Michelin stars in her restaurants across the globe. Together with her Chief Executive Sommelier, Paz Levinson, we have created a blend of modern elegance and inspired imagination. After 2 and a half years of development, during which we visited the primary restaurant Maison Pic numerous times to fine tune the flavours, we are so proud to finally release this special bottle.
A dry sparkling rosé, Uzume is fundamentally inspired by the joyously nostalgic combination of strawberries and cream. Strawberries are fermented in 3 different ways - carbonic maceration, lacto-fermentation, and with a wine yeast - to accentuate their deliciousness. The blend is given its luxurious creaminess from a yoghurt whey.
These playful flavours are afforded more gastronomic depth by the addition of an ice-clarified tomato wine that imbues the blend with a complex savouriness. Further intrigue arrives in the form of vanilla that we have smoked gently over beechwood in our smokery.
Uzume is the perfect blend to toast celebratory occasions as an aperitif. At Maison Pic restaurant in Valence they pair it with an exquisite lobster dish, and it will accompany shellfish beautifully. Sip it with salads and lightly grilled vegetables at your dinner parties.
Tasting notes:
The perfect temperature for Uzume’s aromatic palette is 12°C (54°F). Served in a wineglass, this beverage can be enjoyed on its own or in a cocktail, to bring out its aromatic depth. It is ideal with rosé champagne, heightened with a drop of liqueur de cassis.
Uzume will accompany, depending on the season, a red meat dish, lobster with red berries, a creation centered around tomatoes, a selection of cheeses, or desserts with delicately tangy red fruit notes.
