Sixty° is based on a plum fermentation where we use the crop we received from the southern Danish island of Lilleø, and blacken them using pressure and heat. We add kumquats we have caramelized for beautiful acidity and that classic festive citrus-y vibe, as well as a range of botanicals, including cardamom, carraway, and vanilla that we smoke over beechwood. The blend is rich and dark and highly aromatic.
