MURI Cocktail Competition at Balderdash: Flavour, Technique & Creativity

We recently gathered at one of Copenhagen’s most flavour-forward bars — Balderdash — for an afternoon of ideas, inspiration, and a whole lot of shaking.

Hosted by the legendary Geoffrey Canilao (who describes his approach as “Michelin prep, McDonald’s service”), the day kicked off with a deep-dive into how he riffs on the classics to create something entirely new. Think: thoughtful flavour-building, layered creativity, and a touch of chaos — in the best way.

Our finalists then stepped behind the bar to share their own creations:

Benjamin’s ‘Strawberry Daydream’ 🍓

  • Fresh Strawberry Juice
  • Simple Syrup
  • Sherbet Daydream

Both were bold, personal, and beautifully executed. But it was Simon’s ‘Banana Split’ that took the win — thanks to its technique, complexity, and the clever use of two MURI blends.
