Koji Rice Series 1 was the first release in our Koji Rice Series, an ongoing exploration of koji and its potential beyond traditional applications. It reflects our test-kitchen approach: taking a familiar fermentation culture and using it to create an entirely different kind of drinking experience.

The blend is built around koji rice, which transforms the rice’s starches and creates natural sweetness, savoury depth and a distinctive texture. It is left unfiltered to preserve its full character and luxurious mouthfeel. The result is an earthy, herbaceous and quietly complex expression of one of our favourite fermentation techniques.

Koji Rice Series 1 is particularly suited to the dinner table and reflective, slower occasions. Its combination of sweetness, umami and texture works well with sushi, spicy Thai curries, rice-based desserts and burnt Basque cheesecake. It can also be enjoyed on its own as an introduction to the flavour and texture of koji.

It opens with gentle aromas of rice, grain and fresh herbs. The palate is silky and full, balancing natural sweetness with savoury and earthy notes. It is medium-dry, still and textural, with a soft, lingering finish that reveals more as the drink warms slightly in the glass.
